Delicious Eats: Shrimp Curry Pasta Salad with Chef Tommi V

Chef Tommi Vincent (aka Chef Tommi V) is a celebrity chef and caterer, and wife of former NFL player, Troy Vincent.  Recently, Troy and Tommi launched Vincent Country, a lifestyle movement created to inspire and uplift and reflect positive images.

Chef Tommi recently stopped by Radio One Atlanta to show us how to make her delicious signature

Curry Shrimp Pasta Salad.Ingredients:

2 pounds medium shrimp, peeled and deveined

1 pound of tricolor pasta, cooked, drained, and cooled

1 can coconut milk

3 garlic cloves

2 T butter

1 medium green pepper, diced

1 medium red pepper diced

1 medium yellow pepper diced

1 shallot, minced

1 package of frozen peas, thawed

1 2.5 oz. can black olive slices

1 c. ranch dressing

½ c. mayonnaise

3 T Curry seasoning

2 t salt

½ black pepper

Step 1

Marinate peeled and deveined shrimp in coconut milk, garlic cloves, 2 T curry seasoning overnight.

Step 2

Remove shrimp from marinade, shaking off excess marinade, and bring to room temperature. Sauté shrimp in butter on med-high. Be careful not to overcook shrimp. They will shrink some, but should still be plump and succulent. Remove from heat and cool.

Step 3

Take half of your shrimp and mince. You can either use a food processor or a knife. The idea here is to have a consistency small enough to ensure shrimp is tasted in every bite. We all know folks will pick out the big shrimps!

Step 4

Mix all of your ingredients together, except pasta. After you incorporate all the ingredient incorporate the pasta in small batches to ensure ever noodle is coated.

Chill before serving.

In celebration of World Vegan Day we are sharing some lip smacking recipes from some of our very favourite vegan chefs.

ZAM Smoothie Bowl

This ZAM smoothie bowl created for Matt & Nat for World Vegan Day is creamy, sweet, tart and loaded with antioxidants!

Pomegranate Raspberry Nice Cream Ingredients:

  • 3 frozen bananas cut into 1 inch pieces
  • 1 cup frozen raspberries
  • 2 tbsp pomegranate powder
  • 1 tbsp goji berry powder
  • 2 tbsp hemp seeds
  • 1/4 cup vanilla plant milk

Method:

  • Place all ingredients in a high-speed blender or food processor and blend until the ingredients begin to combine.
  • Scrape the sides of the blender or food processor to incorporate any chunks of fruit or powder left behind and continue blending until smooth and creamy.
  • Decorate with toppings and enjoy!

Toppings:

  • shredded coconut
  • hemp seeds
  • banana slices
  • crushed freeze-dried raspberries
  • buckwheat groats
  • granola
  • pomegranate seeds
  • raspberries

Mushrooms Tacos

Savoury vegan mushroom tacos with a twist.

Ingrediants

  • 1 1/2 cups of chopped shiitake mushrooms
  • 1 tbsp of avocado oil
  • 2 tbsp of lime juice
  • 1 tbsp of cumin
  • 1 1/2 tbsp of garlic powder
  • 1 tbsp of granulated onions
  • 2-3 tsp of coconut sugar
  • 1-2 tsp of cayenne pepper
  • 1 tbsp of oregano
  • Pinch is salt and black pepper

Directions

  1. Just add everything into a bowl and mix thoroughly until all the mushrooms are coated.
  2. Bake at 400 F for 20 minutes or until desired texture.
  3. make tacos and add whatever toppings you want. Enjoy.

Cucumber Salsa

  • 2 cups of chopped cucumbers
  • 1 cup of chopped cilantro
  • 1/4 of a cup lime juice
  • 1/4 of a cup of apple cider vinegar
  • 1 tsp of coconut sugar
  • 1 tsp of cumin
  • 2 tsp of garlic powder
  • A pinch of salt and black pepper

Directions

Just cute all your veggies and add everything into a bowl and mix well. Let it sit for at least an hour before serving.

These tacos contained kale, purple cabbage, cherry tomatoes, mushrooms, and used gluten free tortillas.

FALL HARVEST PANCAKES WITH WARM SPICED APPLES (SCHLEPP)

Pancakes:

  • 1tbsp ground flax/chia
  • 2 tbsp water
  • 1/2 mashed banana (or 1/4 cup applesauce
  • 1 cup plant milk/water (you may need 1 tbsp more)
  • 1/2 cup buckwheat flour*
  • 1/4 cup oat flour*
  • 1/2 tsp baking powder

Spiced apples:

  • 1 apple
  • 2 tbsp maple syrup
  • 1/2 tbsp coconut oil
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • a squeeze of lemon
  • a splash of water

Method:

  1. Whisk together ground flax and water, set aside
  2. Add flours, baking powder, coconut sugar in a bowl and mix well
  3. Combine mashed banana (or applesauce), flax egg and almond milk in a separate bowl
  4. Pour wet ingredients into dry ingredients and stir*
  5. Heat a non-stick pan to medium-low heat
  6. Add in pancake batter to the pan creating a round shape, cook the first side for 1-2 minutes until bubbles appear on the surface, flip and cook for 1-2 more minutes until golden brown
  7. Prepare spiced apples by mixing all ingredients in a small saucepan, cook over low heat for around 10 minutes until apples are soft and water has evaporated
  8. Serve together with dried fruits/nuts/coconut and even more maple syrup!

Notes:

*Make your own buckwheat and oat flour by blending together dried buckwheat and rolled oats in a high speed blender

*Add more almond milk if it appears to be too thick, consistency should resemble a creamy smoothie, remember not to over-mix your batter!

‘The Kari Bowl’ – Spicy Mushroom and Tomato Spaghetti

Ingredients

  • 75g spaghetti
  • 1 tablespoon tomato puree
  • ¼ vegetable stock cube
  • 1 large garlic clove, finely minced
  • ½ teaspoon chilli flakes
  • 60g white mushrooms, sliced
  • 1 teaspoon olive oil (optional)
  • 1 tablespoon freshly chopped parsley

Directions

  1. Cook the spaghetti according to the pack instructions then drain, but reserve some of the cooking water.
  2. Heat the olive oil (or a splash of water) in a medium pan over medium heat. Once warm add the tomato puree and stir fry for 2 minutes.
  3. Add a splash of water, the garlic and vegetable stock cube and cook for 3 minutes. Add the mushrooms and cook for a further 2 minutes until softened. Season with salt and pepper if necessary.
  4. Add the drained spaghetti and stir thoroughly, adding a little of the pasta water if necessary to loosen.
  5. Once warmed through, add the parsley, stir thoroughly and then serve the spaghetti in pasta bowl. Sprinkle on some chilli flakes, black pepper and nutritional yeast (if desired).
  6. Enjoy!

Ingredients:

  • 1 can jackfruit in brine (not the one in sweet syrup)
  • 1.5 cup sliced red onion
  • 1 tbsp minced garlic
  • 1 tbsp coconut oil
  • 3 tbsp Mexican chili powder
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 2.5 tbsp gluten free tamari
  • 1.5 tbsp fresh lime juice
  • 3 tbsp organic ketchup
  • 1 tsp liquid smoke
  • 1/3 cup fresh cilantro
  • Corn tortillas of choice

Optional:

  • Garnish with salsa of choice, vegan sour cream, cilantro and avocado

Coconut Bacon

Ingredients:

  • 1 cup coconut smiles
  • 3 tbsp wheat free tamari
  • 1 tsp liquid smoke
  • 1 tsp paprika
  • 1 tsp black pepper

Method:

For coconut bacon:

  1. Preheat oven to 350F
  2. Line a baking sheet with parchment paper.
  3. Mix all ingredients together and spread evenly over baking sheet
  4. Bake in oven 7-12 minutes stirring frequently
  5. Remove from oven and allow to cool

For Jackfruit Mix:

  • Open the can of jackfruit, drain excess water and rinse under cold water. Slice the jackfruit and set aside.
  • Using a heavy-bottomed, pan, pan fry the onions with the coconut oil on medium- low heat until they are softened, translucent and lightly caramelized ( about 15-20 minutes). Add chopped garlic and fry off gently until soft and fragrant.
  • Add the spices to the onion-garlic mixture. Fry them off gently, stirring the whole time, for a minute or so.
  • Mix in the ketchup and wheat free tamari.
  • Now add in the sliced jackfruit and stir well. Squash the jackfruit pieces with your mixing spoon so that the individual fibers separate more.  Add the fresh cilantro and cook for another 5-8 minutes.
  • Warm up your tacos, spoon in the jackfruit mixture and add your toppings and coconut bacon.

Ugh, More Winter … Here Are Some Delicious Groundhog Recipes!

Well, on Thursday, Punxsutawney Phil the groundhog popped out of his hole, saw his shadow, and sobbed like a baby while fleeing into his namby-pamby hideaway. So, we’ve got six more weeks of winter.

Well, since we have a lot of time to sit indoors — because of, you know, all the winter — let’s talk cooking. Specifically, let’s talk cooking groundhog! 

Here are some of my favorite recipes featuring this yellow-bellied mammal!

Groundhog Stew

1. Rip one cowardly groundhog from his warm and cozy hole.

2. Skin, add to slow cooker filled with vegetables of your choosing.

3. Serves the rage-filled hunger of 1.

 

Groundhog Enchiladas

1. Wrench one shaking, trembling groundhog from its snow-free lair.

2. Skin and shred into pieces.

3. Wrap in warm tortillas, top with cheese, serve with beans and rice.

4. Shred furiously into pieces a second time.

 

Groundhog Burgers

1. Snatch that furry decision-making beast from its god-forsaken mucky squalor.

2. Skin and grind up until blood lust is satiated.

3. Watch creepily as grounded groundhog sizzles on grill.

3. For a healthier option, use wheat buns!

 

Groundhog Shish Kebabs

1. Thrust a sharpened pike into the cavernous hole of that spineless, lily-livered rodent.

2. Serve atop rice. 

3. Oh, cook to taste.

 

Groundhog cake

1. Seize that shadow-seeing rat in your clenched fists and then wring its little neck!

2. Serve with cake.

Note: No groundhogs were harmed during the making of this post. But we’re shaking our fists and glaring like there’s truly no tomorrow.

Kanye West-Inspired Desserts Are Hilarious And Delicious

Imma let you finish but … Kanye West-inspired desserts are the greatest desserts of all time. At least that’s what one ice cream parlor — NYC-based Morgenstern’s Finest Ice Cream — happens to think.

West is known for his love of ice cream, so in honor of the rapper’s 38th birthday, Morgenstern’s teamed up with online foodie site First We Feast to create “Kanye’s Beautiful But Darkly Lit Ice Cream Parlor.” The Yeezy-inspired treats (and hilarious toppings) will be available to the masses from Monday, June 8 at noon to Saturday, June 13 as part of #KanyeIceCreamWeek.

When The Huffington Post spoke with Morgenstern’s owner, Nicholas Morgenstern, and First We Feast’s Chris Schonberger, the two said that the partnership came about naturally. “Since Morgenstern’s already has the G.O.O.D. Music-referencing New God Flow, and we love Nick’s ice cream, we figured there’d be no better shop to team up with to bring these flavors to life,” said Schonberger.

The Kanye items have kept the shop very busy, as Morgenstern says they’ve already sold out of the “I Am A God Cream Croissantwich” and the “All Day Vanilla Cake.”

“”LITTLE Lyova Haskell Rosenthal is precocious,” commented the New York Times after the young child actress had warned the tenor onstage that an actor was sneaking up on him with a big knife in a scene from L’Oracolo. (Little actress Lyova was confined thereafter to Gladys Swarthout’s dressing room to protect the opera from future ruining of the dramatic scene.)

The minute I looked at the new memoir of little actress Lyova Haskell Rosenthal, better known as actress Lee Grant, I knew I wouldn’t be able to resist I Said Yes To Everything. Now the book is here from Blue Rider Press and I’m afraid I pretty much abandoned everything else until I read it.

• Lee Grant is one of America’s greatest actors, most heroic survivors, a contradictory enigma one minute, a sympathetic victim the next. A giant talent condemned falsely to a life of failure who keeps turning it all around into triumph…a woman whose central question is “how do I keep them from knowing how old I am?” while she struggles with the simple domestic yes and no of living with men who dominate and control her.

She was nominated for an Oscar for the famous movie Detective Story, which made Kirk Douglas a star, then found herself listed as a Communist and ruined for movies on the infamous Hollywood black list. (She didn’t really know what a Communist was; and as it turns out, neither did Hollywood, where frightened producers and studio heads condemned giant talents to nothingness over nothing.) Lee Grant didn’t get off the list for a dozen years, not even until JFK was President.

Meantime, Lee Grant went right on acting, acting out, writing, reading, searching, exploring life and sex and meeting everyone who was anyone. And finally, to making classic TV and movies like Valley of the Dolls…Peyton Place…In the Heat of the Night…Shampoo.
It has always been a great secret cachet in my crowd to meet Lee Grant and to try to understand her myth and survival, to enjoy her burgeoning talent and sympathize for her mistreated soul. Eventually she won an Oscar, the Emmy, the First ever Lifetime Achievement Award given by the Women in Film, and founded her own production company. She now makes prize-winning documentaries.

•I CONFESS I was disappointed not to find myself in the index of the glorious in the back of this book, though I am such a minor player in her saga. Lee does make you feel like the only person in the world she has ever loved or trusted (although all I was doing was talking to her about Elizabeth Taylor and what made the star of stars tick.) Like Helen Gurley Brown, Lee Grant lets you remove from her presence while thinking you are the most fab person she has ever met. Quite an art!

ANYWAY, I love, adore, admire Lee Grant. Some of this book makes you think she is crazy; other parts open the reader up to her humanity, love of others, tolerance and the way she keeps show business at arm’s length with a jaundiced but innocent eye. I can’t really do justice to this memoir; it is crammed with names from Orson Welles to Warren Beatty…Jill Clayburgh to Faye Dunaway…Kim

Stanley to Meryl Streep…Roddy McDowall to Chris Walken…Oscar Levant to John Garfield…and on and on; let’s include Gloria Steinem and Susan Sontag.

Here is just a sample of the eye of Lee Grant talking about Grace Kelly after the Hollywood star and super beauty had decided to leave the movie business and become Prince Rainier’s Princess of Monaco. You haven’t read this particular description of the girl from Philadelphia, nor of how the writer Lee Grant segues from her own important business to comment on elements of her own private life. And she never writes or warns the reader of these amazing digressions, not even saying, ‘But I digress…’ You seldom know what road you are going to travel down with Lee.

• She writes:

A kind of elegant ex-actor, mixer in social scenes approached me about doing an hour-long TV program on Princess Grace in Monaco. Budd Schulberg was writing. Interesting. Budd had given names to the committee (on un-American activities.) He’d also written On the Waterfront, the great film Elia Kazan directed. This was the project Kazan and Arthur Miller had shopped in Hollywood and been turned down because –it seemed to favor the unions — and the studios were trying to strangle them.

Budd was a charming worn-out guy. Very simpatico. We met on the way to the airport–we looked in each other’s eyes, saw the worlds apart in them, and kept our thoughts to ourselves.

I visited the castle, went through all the formalities. Çastles are dreary old places. One thinks, the upkeep, the upkeep. We were taken to the royal living quarters — a comfy living room. Grace was welcoming, charming, stressed and nervous–I asked her the questions Budd had written. The answers were formulaic and pleasant. Her posture was that of a girl whose mother had told her to sit straight.

After the first set of questions, while the camera was reloading, I spoke to her as one woman to another, one actress to another. Before this choice to be princess, Grace had gone with my first theatre boyfriend, Gene Lyons. Gene and I were together for two years: Grace and Gene were together for two years– and he was madly in love with her. She was a rich girl from Philly. Taking away the trappings, I said to her, ‘Why are you so cowered? What are you afraid of? Here’s a chance to talk about your life, your children, your husband– be open. You’re so closed off; the things you’re saying sound scripted. It’s boring.’ She started to cry. The producer, who had been her friend in an earlier life, stepped in. ‘Am I boring?’ she asked. ‘Am I boring? I don’t want to be.’ I watched and wished the camera were rolling. There she was, our Grace, so vulnerable and appealing. The producer was furious.

On camera she relaxed more, was very charming, but revealed nothing. She saved the reality for the periods when the camera reloaded, and then she would really talk. She had no friends in Monaco, and the women in the Royal families, those who were in the court, were very critical of her free and easy American style. She, at the time, was surrounded by sharp, mean critics. So she had to watch what she said at all times. Her husband, Prince Rainer? He had a lot of other interests, and she missed him. And he was sending her off that year to live in Paris by herself, because Stephanie was going to start school there, and he felt that the child needed her mother’s guiding hand. I said, ‘Well, Paris– you’ll be away from here at least!’ She said, ‘I spent time in Paris. I was never invited to dinner. I was never invited to anyone’s house, their home. The only time anyone asked me anywhere was to some big function, where they wanted me with the ribbon across my chest!’

While I was getting to know and care for Grace, Joey and Larry joined me in Monaco. I miss Larry Hauben more than any other of my dead friends. He was so fucking unique and smart. And a total druggie. Larry won the Oscar for the screenplay One Flew Over The Cuckoo’s Nest.

Larry and Joey took off for Rome, where Joey’s friend Cerro was the biggest and cuddliest coke dealer in town. They all stayed up at the Spanish Steps at the Hotel De La Ville, which had been my favorite hotel, and then went through, literally, pounds of white powder piled up on the coffee table. Joey and Larry understood Italian perfectly, though they didn’t speak a word of it, and had hours of heated discussions with Cerro and his friends. Larry slept upright in a closet, and they were both thrown out of the Vatican for lying on the marble floor in order to better view the Sistine Chapel. A boy’s life. All the while I stayed behind in Monaco.

The producer never spoke to me ever again.
