5 Super Slow and 5 Super Fast Recipes For Long Workdays

all day crockpot recipesIf one of your holiday gifts last year was a new pressure cooker or slow cooker (Instant Pot included), or if you just haven’t been getting enough mileage out of either or both of these kitchen appliances, we thought we’d round up some recipes for inspiration. Here are five all day crockpot recipes and five super fast Instant Pot recipes we’re interested in trying — slow for the long workdays, and fast when you want to make something quick (15 minutes or less) when you get home from work and can’t deal with another meal from Seamless or the freezer. Do you have a new pressure cooker or slow cooker that you’ve been trying out? What are your favorite sources of recipes (or recipes!) for them? Do you have any go-to fast or slow meals?

These work really well for long workdays — a cooker with a timer can keep your meal warm for another 1–2 hours after it’s finished cooking.

  • A Year of Slow Cooking suggests meals with beans — even after hours of cooking, they won’t be dried out. Prep time: soak beans overnight (or 1–2 hours); cook time: 9 hours on low.
  • Recipes that Crock has a recipe for Italian pot roast. Prep time: 5 minutes; cook time: 8–10 hours on low).
  • Skinny Taste shares an easy recipe for jerk pork with Caribbean salsa. Prep time: marinate overnight; cook time: 9 hours on low.
  • The Skinny Fork shares a spaghetti squash Thai “noodle” bowl. Prep time: 1 minute to poke holes in squash, plus a few minutes to prep dressing and steam broccoli; cook time: 8–9 hours on low.
  • Cafe Johnsonia offers a vegan option for white bean stew. Prep time: 20 minutes; cook time: 8–10 hours on low.

Super Fast Instant Pot Recipes: 15 Minutes or Less

If you get home late or just don’t have much time to cook, try these quick and easy recipes.

  • Instant Pot shares a 1-minute pork chops and homemade applesauce recipe.
  • Health Starts in the Kitchen offers a 5-minute salmon and rice pilaf recipe.
  • A Fork’s Tale has a 15-minute orange chicken recipe that can be made while you steam broccoli and prepare rice.
  • The Sausagetarian offers a curried red lentil and sweet potato soup that is ready in about 10 minutes, including prep time.
  • Two Sleevers has a 10-minute recipe for chicken tikka masala. At the end, you remove the chicken and freeze half of the sauce for leftovers. (You’ll probably want to marinate the chicken for 1–2 hours ahead of time.)

ZAM Smoothie Bowl

This ZAM smoothie bowl created for Matt & Nat for World Vegan Day is creamy, sweet, tart and loaded with antioxidants!

Pomegranate Raspberry Nice Cream Ingredients:

  • 3 frozen bananas cut into 1 inch pieces
  • 1 cup frozen raspberries
  • 2 tbsp pomegranate powder
  • 1 tbsp goji berry powder
  • 2 tbsp hemp seeds
  • 1/4 cup vanilla plant milk

Method:

  • Place all ingredients in a high-speed blender or food processor and blend until the ingredients begin to combine.
  • Scrape the sides of the blender or food processor to incorporate any chunks of fruit or powder left behind and continue blending until smooth and creamy.
  • Decorate with toppings and enjoy!

Toppings:

  • shredded coconut
  • hemp seeds
  • banana slices
  • crushed freeze-dried raspberries
  • buckwheat groats

Mushrooms Tacos

Savoury vegan mushroom tacos with a twist.

Ingrediants

  • 1 1/2 cups of chopped shiitake mushrooms
  • 1 tbsp of avocado oil
  • 2 tbsp of lime juice
  • 1 tbsp of cumin
  • 1 1/2 tbsp of garlic powder
  • 1 tbsp of granulated onions
  • 2-3 tsp of coconut sugar
  • 1-2 tsp of cayenne pepper
  • 1 tbsp of oregano
  • Pinch is salt and black pepper

Directions

  1. Just add everything into a bowl and mix thoroughly until all the mushrooms are coated.
  2. Bake at 400 F for 20 minutes or until desired texture.
  3. make tacos and add whatever toppings you want. Enjoy.

Cucumber Salsa

  • 2 cups of chopped cucumbers
  • 1 cup of chopped cilantro
  • 1/4 of a cup lime juice
  • 1/4 of a cup of apple cider vinegar
  • 1 tsp of coconut sugar
  • 1 tsp of cumin
  • 2 tsp of garlic powder
  • A pinch of salt and black pepper

Directions

Just cute all your veggies and add everything into a bowl and mix well. Let it sit for at least an hour before serving.

These tacos contained kale, purple cabbage, cherry tomatoes, mushrooms, and used gluten free tortillas.

FALL HARVEST PANCAKES WITH WARM SPICED APPLES (SCHLEPP)

Pancakes:

  • 1tbsp ground flax/chia
  • 2 tbsp water
  • 1/2 mashed banana (or 1/4 cup applesauce
  • 1 cup plant milk/water (you may need 1 tbsp more)
  • 1/2 cup buckwheat flour*
  • 1/4 cup oat flour*
  • 1/2 tsp baking powder

Spiced apples:

  • 1 apple
  • 2 tbsp maple syrup
  • 1/2 tbsp coconut oil
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • a squeeze of lemon
  • a splash of water

Method:

  1. Whisk together ground flax and water, set aside
  2. Add flours, baking powder, coconut sugar in a bowl and mix well
  3. Combine mashed banana (or applesauce), flax egg and almond milk in a separate bowl
  4. Pour wet ingredients into dry ingredients and stir*
  5. Heat a non-stick pan to medium-low heat
  6. Add in pancake batter to the pan creating a round shape, cook the first side for 1-2 minutes until bubbles appear on the surface, flip and cook for 1-2 more minutes until golden brown
  7. Prepare spiced apples by mixing all ingredients in a small saucepan, cook over low heat for around 10 minutes until apples are soft and water has evaporated
  8. Serve together with dried fruits/nuts/coconut and even more maple syrup!

Notes:

*Make your own buckwheat and oat flour by blending together dried buckwheat and rolled oats in a high speed blender

*Add more almond milk if it appears to be too thick, consistency should resemble a creamy smoothie, remember not to over-mix your batter!

‘The Kari Bowl’ – Spicy Mushroom and Tomato Spaghetti

Ingredients

  • 75g spaghetti
  • 1 tablespoon tomato puree
  • ¼ vegetable stock cube
  • 1 large garlic clove, finely minced
  • ½ teaspoon chilli flakes
  • 60g white mushrooms, sliced
  • 1 teaspoon olive oil (optional)
  • 1 tablespoon freshly chopped parsley

Directions

  1. Cook the spaghetti according to the pack instructions then drain, but reserve some of the cooking water.
  2. Heat the olive oil (or a splash of water) in a medium pan over medium heat. Once warm add the tomato puree and stir fry for 2 minutes.
  3. Add a splash of water, the garlic and vegetable stock cube and cook for 3 minutes. Add the mushrooms and cook for a further 2 minutes until softened. Season with salt and pepper if necessary.
  4. Add the drained spaghetti and stir thoroughly, adding a little of the pasta water if necessary to loosen.
  5. Once warmed through, add the parsley, stir thoroughly and then serve the spaghetti in pasta bowl. Sprinkle on some chilli flakes, black pepper and nutritional yeast (if desired).
  6. Enjoy!

Ingredients:

  • 1 can jackfruit in brine (not the one in sweet syrup)
  • 1.5 cup sliced red onion
  • 1 tbsp minced garlic
  • 1 tbsp coconut oil
  • 3 tbsp Mexican chili powder
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 2.5 tbsp gluten free tamari
  • 1.5 tbsp fresh lime juice
  • 3 tbsp organic ketchup
  • 1 tsp liquid smoke
  • 1/3 cup fresh cilantro
  • Corn tortillas of choice

Optional:

  • Garnish with salsa of choice, vegan sour cream, cilantro and avocado

Coconut Bacon

Ingredients:

  • 1 cup coconut smiles
  • 3 tbsp wheat free tamari
  • 1 tsp liquid smoke
  • 1 tsp paprika
  • 1 tsp black pepper

Method:

For coconut bacon:

  1. Preheat oven to 350F
  2. Line a baking sheet with parchment paper.
  3. Mix all ingredients together and spread evenly over baking sheet
  4. Bake in oven 7-12 minutes stirring frequently
  5. Remove from oven and allow to cool

For Jackfruit Mix:

  • Open the can of jackfruit, drain excess water and rinse under cold water. Slice the jackfruit and set aside.
  • Using a heavy-bottomed, pan, pan fry the onions with the coconut oil on medium- low heat until they are softened, translucent and lightly caramelized ( about 15-20 minutes). Add chopped garlic and fry off gently until soft and fragrant.
  • Add the spices to the onion-garlic mixture. Fry them off gently, stirring the whole time, for a minute or so.
  • Mix in the ketchup and wheat free tamari.
  • Now add in the sliced jackfruit and stir well. Squash the jackfruit pieces with your mixing spoon so that the individual fibers separate more.  Add the fresh cilantro and cook for another 5-8 minutes.
  • Warm up your tacos, spoon in the jackfruit mixture and add your toppings and coconut bacon.

Earlier this week I declared open season on pumpkin recipes – it’s September, there’s a chill in the air in the mornings (nevermind that it’s 80 degrees after lunch) and I saw mums and pumpkins at the grocery store. Verdict: it’s totally fine to talk about pumpkin.

I did a great pumpkin donut on Thursday, but wanted to put together a round-up of my best pumpkin recipes so you can choose something perfect for your inaugural pumpkin voyage. Here are a few of my absolute favorites (click links for recipes):

Ugh, More Winter … Here Are Some Delicious Groundhog Recipes!

Well, on Thursday, Punxsutawney Phil the groundhog popped out of his hole, saw his shadow, and sobbed like a baby while fleeing into his namby-pamby hideaway. So, we’ve got six more weeks of winter.

Well, since we have a lot of time to sit indoors — because of, you know, all the winter — let’s talk cooking. Specifically, let’s talk cooking groundhog! 

Here are some of my favorite recipes featuring this yellow-bellied mammal!

Groundhog Stew

1. Rip one cowardly groundhog from his warm and cozy hole.

2. Skin, add to slow cooker filled with vegetables of your choosing.

3. Serves the rage-filled hunger of 1.

 

Groundhog Enchiladas

1. Wrench one shaking, trembling groundhog from its snow-free lair.

2. Skin and shred into pieces.

3. Wrap in warm tortillas, top with cheese, serve with beans and rice.

4. Shred furiously into pieces a second time.

 

Groundhog Burgers

1. Snatch that furry decision-making beast from its god-forsaken mucky squalor.

2. Skin and grind up until blood lust is satiated.

3. Watch creepily as grounded groundhog sizzles on grill.

3. For a healthier option, use wheat buns!

 

Groundhog Shish Kebabs

1. Thrust a sharpened pike into the cavernous hole of that spineless, lily-livered rodent.

2. Serve atop rice. 

3. Oh, cook to taste.

 

Groundhog cake

1. Seize that shadow-seeing rat in your clenched fists and then wring its little neck!

2. Serve with cake.

Venere Rice With Zucchini, Peas And Spring Onions

Serves 4, 200 gr. Venere rice, 2 zucchini, 1 green pepper, 200 gr. of peas, 2 onions, 1 red pepper, 1 teaspoon crushed cardamom and cumin seeds, 1 bay leaf, red basil, extra virgin olive oil, salt. Boil the rice in salted water. Meanwhile, finely chop the onions and dice the bell pepper and zucchini. Wash the peas (frozen are fine) and leave them to drain. Heat 2 tablespoons of oil in a wok, add the onions and let them brown, stirring frequently. Add the bay leaves, pepper, cardamom and cumin and cook for a minute, stirring. Add zucchini, peas and pep- pers, cover the wok and cook for 3 minutes. Add the well-drained rice, add salt if necessary, season with torn basil leaves and leave for a minute before serving.

Kamut Noodles With Peppers, Shrimp And Ginger

Serves 4. 250 gr. of kamut wheat noodles, 200 gr. of peeled shrimp, 2 red peppers, 1 carrot, 2 spring onions, 10 cherry tomatoes, 2 cm. grated ginger root, 1 tablespoon chopped parsley or cilantro, 1 tablespoon soy sauce, olive oil, salt and pepper. Boil the noodles in boiling salted water for half the time written on the packet: it must remain al dente. Drain and season with a trickle of oil to keep it from sticking. Wash the shrimp and let them drain well. Peel the vegetables; finely chop the green onions, cut the cherry tomatoes into quarters and julienne the peppers and carrot. Heat 2 tablespoons of oil in a wok or in a pan. And the ginger and spring onion and let them cook for about a minute, stirring often. Add the carrot and peppers and after two minutes the shrimp and tomatoes. Season with soy sauce, cover the wok and cook for a minute. Add the noodles and the parsley, mix well and season with salt and pepper. Cover and cook for a minute before serving.

Wholewheat Couscous With Fruit And Maple Syrup

Serves 4. 200 gr. couscous, 400 gr. red fruit, 4 teaspoons of maple syrup or honey, 1/2 teaspoon ground cinna- mon, 8 mint leaves, the juice and grated zest of 1/2 lemon, olive oil, a walnut-sized pat of salted butter, salt. Heat a tablespoon of oil in a pan, add the couscous and toast for a few seconds, stirring. Barely cover with lightly salted hot water, remove from heat, cover with a cotton cloth and leave the couscous to swell. After 30 minutes, pour into a baking dish, break it up with your fingers or with a fork and let it dry. Clean the strawberries, cut them into pieces and put them in a bowl, add the raspberries, chopped mint and lemon juice, then stir. Heat the salted butter in a wok and toast the cinnamon, add maple syrup and lemon zest, pour it over the fruit and after a minute the couscous, stir gently and serve.
